Christmas Soup

Saute Peppers and Garlic in a Stock Pan. Wait until hot and add spinach. Bring to a boil and add spices, couscous and broccoli. Reduce heat and let sit for about 5 minutes. Turn off heat, and let sit for another 10-15 for the flavors to come together. Top with Parmesan Cheese and more S/P. Enjoy!

*** If you add to much couscous, you end up with a large pot of just couscous, which is also good, but unfortunate if you're going for soup. It will sneak up on you. I added 1 C / 6.5 Cups water, and ended up with a VERY thick soup. Next time I'd definitely add less. Also the soup didn't have as much flavor as I'd have liked. I didn't add the rosemary, and will definitely do that next time, as well as some celery (blech) for flavor. Anybody have any other suggestions?30This soup is named because it looks like a Christmas Tree in your pot. You've got the broccoli as the tree, and the peppers and garlic and coucouscoucous as ornaments. If you're really wanting to get into the holiday spirit, then add some star shaped noodles. I'd give this recipe a 3 out of 5 stars.2 cloves garlic1/2 Red Bell Pepper chopped small1/2 yellow Bell Pepper chopped small1/4 Block Frozen Spinach10-12 Broccoli FlorettesFlorettes1/2 Cup -1 Cup Couscous (depending on how chunky you like your soup)5-6 Cups Water2-3 Chicken Boullion Cubes Salt to taste ( I needed A LOT)White and Black Pepper- to taste2 tsp Lemon Juice1/4 tsp Rosemary

Pretty Darn Decent Spinach Casserole

Preheat oven to 350. Grease a baking dish with olive oil

Blend rice and thawed spinach.
Saute garlic and peppers in the olive oil for a few minutes until not crunchy.
Mix pepper mixture into spinach mixture.
Add 1 block feta cheese and spices

(you can also add the milk and the eggs, but this will turn it from a rice pilaf to a quiche, which would also be good. I haven't tried it yet, but I can imagine :) )

Crumble the rest of the feta on top and slice the tomatoes thin and lay them across the top and bake until cheese is all melty and browned on top. Mmmmmm...45Here is a casserole made from foods that I can eat. It's pretty tastey. John said that it should be added to our normal rotation. 1 block frozen spinach (somewhat thawed)2-3 cups cooked rice (preferably still hot, but leftovers are fine too)1/2 Cup red and yellow peppers, chopped fine2 cloves garlic2 tablespoons Olive Oil1/8-1/4 tsp Cinnamon1/4 tsp white peppersalt to taste (doesn't seem to need much)1.5 Blocks of Feta Cheese (crumbled)1 tomato2 Eggs (optional)1/2 milk (optional
